If you have an Android, just go to settings and scroll down to “Privacy”. Here you find access to the microphone and unmark all the apps you want to remove access from.
It’s also worth looking at the apps that can only use the microphone when the app is open. Some of them run in the background when they are theoretically not open.
You can also set which programs can run in the background according to your preferences. If you are an iPhone user, you must also look in the settings under “Privacy and protection”. Here you find settings for access to the microphone and opt out of all apps that have access to it.

However, it’s worth looking at other privacy settings, as it’s not just the microphone that’s being used to collect your data.
