If there is one thing you should take away from this wine column, it is the following advice: The perfect lamb wine rarely works for a cozy sofa. Therefore, you need two types of wine if you want to top off Easter. A soft wine to chill. A more snarky one for lamb. We can talk about sofa wines another time. Because now I’m so intensely focused on Easter lamb and the best wine choices for it, that I’m starting to irritate my surroundings. Are you ready for some theory? Let’s get started.

The big three

Let me put it this way: There are plenty of wines from around the world that will dress lamb. But today I focus on the three big areas, namely wine from Bordeaux, Rioja and Piedmont. The common denominator is that there they make red wines with a concentrated taste of berries, which change character if they are stored. And they have what we call structure. I like to refer to it as snarl. By that I mean the dry feeling that settles in your cheeks after you’ve taken a sip.
